ARFID AND Gluten-Free?? Easy Bread Machine Recipe to keep this "safe-food" available!

Living with ARFID can be a challenging journey for individuals and their caregivers. Finding safe and enjoyable food options that meet dietary requirements is often a struggle. It can be devastating to find out bread - a common staple and safe food - is no longer okay for your diet, such as being diagnosed with celiacs or a sensitivity to wheat (including rye and barley products). We’re here to share a simple gluten-free bread machine recipe that will make nourishing your loved ones not only possible but delicious as well.
The magic of a bread machine lets you bake gluten-free bread at home with minimal effort, and without the cost of the - let's be honest - awful stuff sold at the store. At the end, check out some of my other favorite gluten-free options!
A word of encouragement: if you are grieving losing a favorite or safe food, also keep in mind that you may feel significantly better once gluten free. This can open the door to new foods. For example, if your ARFID was influenced by stomach discomfort and cutting gluten is the key to getting rid of this symptom, many other foods may now be palatable.
Why a bread machine?
Life with dietary restrictions is already a curve ball, whether your caring for yourself or a loved one. Almost any variation of this recipe takes just about 5-minutes, and about 3-hours in a bread machine. So put it together after work, let it cool and package for fresh bread in the morning. Or if you work from home, toss the ingredients in the bread machine and have warm, fresh bread for lunchtime! The machine does the mixing, kneading, proofing and baking. Of course, if you prefer the tactile, hands on approach, or using natural gas rather than electricity, let's go Dutch! AKA, the same recipes works, but once you mix and knead, proof and cook in a Dutch oven.
Let's Break it Down!
Making regular, wheat flour (gluten) bread can be super simple, usually involving only a few ingredients. When we think about gluten free bread, we think about alternatives to these ingredients.
Note - the first recipe I tried simply replaced wheat flour with a 1:1 gluten free flour mix that already has gluten-replacement binders mixed in. It turned out great, but somewhat dense. This skips the eggs and vinegar.
Note - Most people will have no problem using a premixed 1:1 gluten free flour or bread mix package. I only list the options for separate ingredients below a) for people with additional dietary restrictions and b) those who want to take a deep dive!

Ingredients for Gluten-Free Bread Machine
There are many slight variations on this recipe, and try different brands of flour.
2 cups gluten-free all-purpose flour mix
1 cup warm water (about 110°F or 43°C)
1/4 cup packed brown sugar
1/4 cup olive oil or melted coconut oil
1 tablespoon apple cider vinegar
1 teaspoon salt
1 tablespoon instant yeast

Step-by-Step Instructions
Step 1: Add the Liquid Ingredients into the bread machine
Step 2: Add Dry Ingredients
Add the sugar first. Then gently add the gluten-free flour, salt, and instant yeast on top.
Step 3: Select the Right Setting
Close the lid of the bread machine and choose the gluten-free or basic white bread setting. If your machine allows it, adjust the crust preference to your liking or the amount. Press start and let your machine do the hard work! In about 2 to 3 hours, your home will fill with the wonderful aroma of freshly baked bread.

Once it's Finished, Cool and Slice the Bread, then Enjoy!
Once the baking cycle is finished, carefully remove the bread pan from the machine. Allow it to cool for about 10 minutes before transferring the loaf to a wire rack. This cooling period ensures the bread’s texture is perfect for slicing.
Once cooled, slice the bread into even pieces. This gluten-free bread can be toasted for breakfast or used for sandwiches, topped with nut butter or jam, depending on your loved one’s preferences. Remember, small steps can help expand their comfort zone with food.
Storage Tips
To keep this safe food available longer, store any leftover bread in an airtight container at room temperature for up to three days. For longer storage, slice the bread and freeze it. Wrap individual slices in plastic wrap and place them in a freezer bag to ensure convenience. Having slices on hand makes it easy to enjoy fresh bread whenever you like. Ensure it is cooled before storing (or moisture will make the bread soggy and possibly go bad)!
Experimenting with Different Flavors
One of the best aspects of homemade gluten-free bread is the flexibility to experiment! Try adding ingredients to enhance flavor and appeal OR to expand your palate. Consider incorporating:
Herbs: Rosemary, thyme, or basil can provide a delightful aroma and taste.
Seeds: Flax seeds or chia seeds can add a pleasing crunch while supplementing protein.
Cheese: For flavor and protein, shredded cheese can mix in better, while larger pieces can change the texture.
